Healthy & Delicious Raw Macaroons

These Raw Chocolate Coconut Macaroons are my go-to when I am craving something sweet. Not only are they easy, chocolatey, delicious and store in the freezer, but they are actually GOOD for you! They are full of antioxidants, energy and fuel, yet gluten-free, dairy free, egg free and sweetened naturally. How can you beat that?!?!

3 cups raw, unsweetened shredded coconut
1 cup cocoa powder (Trader Joes is my favorite)
1/2 cup almond flour (skip if making nut-free)
1/4 tsp sea salt
1 cup maple syrup
1/2 cup coconut oil, liquified
1 tbs pure vanilla extract
Combine first 4 ingredients in a bowl and mix well. Add remaining ingredients and mix together. Using an ice cream scoop or a spoon, form golfball- sized bites and place them on a small sheet pan. Once all balls are formed, place sheet pan in fridge for at least 30 minutes or up to several hours to harden. Once hardened, place balls in a freezer safe container and store in freezer for up to 3 months
